Zov Marinated Salmon

When you head out to eat, you can enjoy some of the finest marinated recipes from top chefs. The good news is that the editors of Marinaters have worked to bring you some top secret restaurant recipes that you can prepare at your own home. One of our favorites is the Zov’s Marinated Salmon, which is served with a spicy sauce and is the perfect dinnertime recipe that is just spicy enough to have a solid kick.
To start, you’ll want to select four wild Alaskan salmon (roughly 6-8 ounces each) – the best salmon will be fresh, although you can also thaw out frozen if that’s all that’s available. There is a major difference between wild and farmed salmon, so always make sure to choose the former. Next you’ll want a few fresh tomatoes – you can select any variety, but we recommend vine ripened organic tomatoes for the best dish. Next, you’ll want to pick up some fresh basil and a few cloves of garlic for seasoning. On top of that you’ll need some fresh ground pepper, kosher sea salt and some olive oil. Additionally, you can add a small red onion, which you’ll dice to add some flavor. The secret to this recipe is a spice mixture that you’ll use to season the fish, which is comprised of cayenne pepper, paprika, cumin, thyme, rosemary, allspice and cinnamon – combine a teaspoon of each for a great seasoning.
Begin by rubbing the spices into the fish, and then combine the additional vegetables and spices in your marinade (save the garlic and onion) and let sit overnight. You’ll want to grill the salmon at 350 degrees for about 5 minutes each side. Then remove the salmon from the grill and add to a pan with olive oil, onion and garlic, and let cook for a few minutes until it’s perfectly suited for serving.
